Fluffy Banana Cake | Dessert


Ingredients & Adaptations
  1. 40g melted butter*

  2. 40g granulated sugar

  3. 1 large overripe mashed bananas

  4. 1 tbsp almond milk**

  5. 1/4 tsp vanilla extract

  6. 1 egg

  7. 1/2 cup, 80g cake flour

  8. 1/4 tsp, 1g baking soda

  9. 1 1/2 tsp baking powder***

*The recipe did called for salted butter but I used unsalted.

**I used almond milk instead of whole milk as it is my preferred non-dairy option.

***The recipe did called for 1/4 tsp baking soda but I did not have any on hand, so I replaced with more baking powder.


Directions
  1. Combine melted butter and sugar in a bowl.

  2. Sift in cake flour, baking powder and baking powder.

  3. Add banana, milk, vanilla extract and egg until well combined.

  4. Rest for at least 10 minutes before baking.

  5. Pour batter into greased/ lined pan and bake in preheated oven 170°C for 35 minutes.

  6. Slice and serve.


Thoughts

It is one of the fluffier banana cake/ bread amongst the ones that I have made. I did test with a toothpick every 5 minutes after the 30 minute mark as I was using a square pan. Bake longer if necessary but cover with a foil if the top is getting too dark. Mine developed a crack and a crust but I was ok with it.
