Recipe from hyossome on YouTube
(As I'm not feeding a crowd, I usually half the recipe and bake with minimal ingredients since I did not know how it will turn out.)
Ingredients & Adaptations
110g Dark chocolate
30g Unsalted butter
1 Egg
55g Brown sugar
45g All Purpose flour
4g baking powder*
Splash of Vanilla essence
*The recipe did called for 1/4 tsp baking soda but I did not have any on hand, so I replaced with more baking powder.
Directions
In a double boiler, melt chocolate and butter.
In a separate bowl, whisk egg and sugar until frothy and combine the melted chocolate mixture.
Sift in the dry ingredients and whisk in vanilla essence.
Rest batter in fridge for 30 minutes - 1 hour.
Scoop into cookie shape and bake in preheated oven at 160ºc for 10 minutes.
Thoughts
Not sure what went wrong but my melted chocolate mixture was not as fudgey as the video. When i combined it with everything else, the batter was not runny but thick enough to roll in my palm. Needless to say, after I baked it, it was very dry. Not the soft chewy cookie of my dreams so I tried to decorate it with some sugar on top to give it some sweetness. Please recommend me a better/ foolproof recipe :'-)
