Banana Rice Cooker Cake with Milo Sauce | Dessert

Milo Sauce recipe from Ang Sarap Grabe on YouTube

(As my first few recipes and not feeding a crowd, I usually half the recipe and bake with minimal ingredients since I did not know how it will turn out.)

Ingredients & Adaptations

CAKE

  1. 100g Cake Flour

  2. 1 tsp Baking Powder*

  3. Pinch of Salt 盐 少许

  4. 2 Eggs

  5. 65g Castor Sugar

  6. 140g Mashed Banana

  7. Splash of Vanilla Essence

  8. 65g Vegetable Oil

*The recipe did called for baking soda but I did not have any on hand, so I replaced with more baking powder.


MILO SAUCE

  1. 45g Milo Powder

  2. 1 tbsp Milk


Directions
  1. Sift dry ingredients into a bowl and set aside.

  2. Beat eggs, sugar, bananas and vanilla essence until thick.

  3. Fold dry ingredients in 3 batches gently using a spatula.

  4. Mix in the vegetable oil until just combined.

  5. Grease rice cooker with oil or melted butter and pour in batter.

  6. Gently tap the pot to release air and cook it until CAKE function.

  7. Test with a toothpick and it should come out clean when done baking.

  8. Sift and mix the two ingredients for the sauce until smooth. Add more milk if too dry, more milo powder if too wet.

  9. Drizzle sauce, slice and serve.


Thoughts

The cake may seem VERY flat but that's because I made a small batter. Overall, it was still a little dense so I might add more baking powder/ baking soda. The sauce does get absorbed after a while but still gives moisture to the cake.
